Delicious Crab Fried Rice recipeIf you like crab like I do, you will absolutely love my delicious crab fried rice recipe! In this recipe I have used canned crab meat, but you can simply use fresh crab meat, depending on your local availability and the time because it will take longer to de-shell the crab. Ingredients :

  • 2 cups of long grain rice.
  • 2 tbsp peanut oil or olive oil.
  • 4 1/2 oz or 125 grams of canned white crab meat, drained.
  • 1 cup of bean sprouts.
  • 2 eggs beaten.
  • 1 leek sliced.
  • 1 tbsp of light soy sauce.
  • 1 tsp sesame oil
  • 2 tsp of lime juice.
  • Salt to taste.
  • 1 lime sliced, to garnish.

 

Directions :

  1. Cook the 2 cups of rice, following the instructions given in the recipe "Seasoned white rice." but with out adding the seasoning to the rice.
  2. In a large wok, heat the peanut oil on high heat setting.
  3. Add the crab meat, leek, bean sprout and stir-fry for about 2 to 3 minutes.
  4. Remove from the wok and set aside.
  5. Now add the 2 beaten eggs to the wok and stir occasionally, untill the eggs set.
  6. Stir in the crab meat mix and the rice into the eggs.
  7. Add the soy sauce, sesame oil and lime juice and cook for about a minute or 2.
  8. Transfer the crab fried rice on to a serving dish and garnish with the sliced lime.
  9. Serve while hot.
